Would any of you recommend any of these Windows 10 "Lite" versions for a new computer or just a relatively old machine and are most able to be updated through Microsoft?

Windows 10 Lite V7, some of the users are reporting that windows updates are working

These two threads will answer the first part of your questions.

As for 'lite' OS's receiving Windows updates, I would read everything in the opening post about what is removed, added, enabled and disabled as it varies.

FYI: the PC specs in the spoiler are more than enough to run the full OS with good speed. Still, there is no difference in speed between full and lite, so it is up to you.
