I am at not on Windows 7 at the moment to tell you exactly what you need to do.
It is for Windows 10 but pretty well same thing.

AIO ISO all have the TeamOS brand. Download a single Windows 7 build and you won't have the logo.

if you want modify owner name modify file at root of dvd : autounattend.xml

open with notepad and modify this:

if you want normal & interactive install process delete this file (autounattend.xml)

save new iso after finish.

Easy way for logo ! you can use windows 7 loader by DAZ in the third option *OEM* information and change any logo you want incl your own pic.
