I don't think so. You could use any other AV app. The free version of Avast provides better security than Defender and it's free.

No way to put it back.
As @Charlie_Grimes said just use another AV, windows defender is not the best option these days thats why I remove it in almost all in my custom builds.

Open search and write "regedit". There you have to go to:

HKEY_LOCAL_MACHINE\SOFTWARE\Microsoft\Windows NT\CurrentVersion\PasswordLess\Device
Data:

• 0 means Require Windows Hello sign-in is disabled
• 2 means Require Windows Hello sign-in is enabled

You have to set 0. After that write on search "netplwiz.exe" and open. After that uncheck "Users must enter a user name and password" -> Reboot.

PS: if you wanna use your password, just recheck again the box in netplwiz (you will have to write only password / pin, not username)

Don't know why this had happened but you can put in the user the name you have set and nothing on password
For example:
user: "Jerry" in your case the name you have set during the windows installation
password: "nothing"

The other solution is to delete the autounattend.xml from the iso
